Avocado Egg Salad

Serves 3 


Ingredients


  • 1 avocado, diced and tossed in the juice of 1 lemon 
  • 2 hard-boiled eggs 
  • 2 tablespoons minced shallot 
  • 2 radishes, chopped 
  • 2 teaspoons green hatch chilies 
  • ¼ teaspoon sea salt or pink Himalayan salt 
  • 1/8 teaspoon black pepper 
  • 3 cups organic baby spinach 


Directions 

  • Dice eggs and gently combine with avocado, shallot, radishes, chilies, salt, and pepper.
  • Serve on top of the spinach.
