Crab Salad

Serves 4


Ingredients

  • 8 ounces lump crabmeat picked over for shells
  • 1/4 cup safflower mayonnaise
  • 2 teaspoons finely grated lemon zest
  • 2 teaspoons freshly squeezed lemon juice
  • Dash of hot sauce, such as Tabasco
  • Dash of coconut aminos
  • 1 teaspoon Old Bay Seasoning
  • 1 stalk celery finely diced
  • 1 scallion finely chopped
  • Butter lettuce


Directions

  • Combine mayonnaise, lemon zest, lemon juice, hot sauce, coconut aminos, and Old Bay Seasoning; stir until combined. 
  • Add celery and scallion and stir until combined. 
  • Gently fold in lump crabmeat and spoon onto butter lettuce and serve.
